Make Oatmeal Crisps

Oatmeal crisps are a nice light snack that go great with milk. It's an old recipe from my mom which has been modified over the years. However, I will be posting the original as the modifications are secret :cool:

Ingredients:
  • 1 1/4 cups vegetable shortening
  • 1 cup brown sugar
  • 2 cups flour (all purpose)
  • 1/2 tsp baking soda
  • 1/4 cup hot water
  • 1 tsp vanilla extract
  • 2 cups large rolled oats
  • dash of salt

Preparation:
  1. Preheat oven to 325 F
  2. Combine shortening and sugar in a bowl and mix until fluffy
  3. Add flour and salt. Beat it :o
  4. Dissolve baking soda in water and mix with dough
  5. Add vanilla
  6. Add oats gradually to the dough while continuing to mix it. Add more hot water if too stiff
  7. Drop the dough using a round tablespoon onto cookie sheets keeping some space between each piece
  8. Flatten each piece with a fork that was dipped in hot water
  9. Bake at 325 F for 10 to 12 minutes until golden brown and crispy
  10. Makes approximately 40 cookies
