Oatmeal crisps are a nice light snack that go great with milk. It's an old recipe from my mom which has been modified over the years. However, I will be posting the original as the modifications are secret :cool:
Ingredients:
- 1 1/4 cups vegetable shortening
- 1 cup brown sugar
- 2 cups flour (all purpose)
- 1/2 tsp baking soda
- 1/4 cup hot water
- 1 tsp vanilla extract
- 2 cups large rolled oats
- dash of salt
Preparation:
- Preheat oven to 325 F
- Combine shortening and sugar in a bowl and mix until fluffy
- Add flour and salt. Beat it
- Dissolve baking soda in water and mix with dough
- Add vanilla
- Add oats gradually to the dough while continuing to mix it. Add more hot water if too stiff
- Drop the dough using a round tablespoon onto cookie sheets keeping some space between each piece
- Flatten each piece with a fork that was dipped in hot water
- Bake at 325 F for 10 to 12 minutes until golden brown and crispy
- Makes approximately 40 cookies
