I'm a total grill noob and have no idea what to do.
I can get a fire started no problem but my meat keeps drying out, any tips?
also, recipes would be appreciated.
If your meat is drying out, try using a marinade. If you already are marinating, try letting it sit longer. When I grill beef I marinade for at least 36 and usually 48 hours to get the meat good and tender/flavorful. Chicken absorbs flavor much quicker.
a good strategy is to bank your coals so the meat doestnt dry out. that means put the charcoal on one side of the grill but place the meat on the other. a few more details bout what you are trying to do would be helpful.
Actually it's been a while since I've grilled, but next weekend I'm doing it with some friends.
They're gonna get the coal and everyone brings their own meat and drinks. So I don't know what I'm going to do yet. I have a few days to choose my protein, so I thought totse would be a nice place to turn to.

Just a general grilling tip, put a few sticks of apple or hickory wood over the charcoal while girlling to give it a smoky flavor.
Also, what kind of charcoal are you using?
