Baked Pancake (4-6 servings)
Ingredients:
1/2 cup white sugar
1 1/4 cups all-purpose or whole wheat flour
1 teaspoon salt
2 cups milk
3 eggs
Directions:
1. Preheat oven to 400 degrees F.
2. In a medium bowl stir together sugar, flour, and salt. Add eggs, milk and vanilla. Beat with an electric mixer until blended. Batter will be very thin. Coat all sides of a 9x13 inch pan with cooking spray or melted butter.
3. Pour batter into the baking pan and bake for 35-40 minutes. It will puff up when baking, and flatten when cool. Cut into squares and serve.

Changes I make from the original recipe: I use whole wheat flour, add vanilla & coat the pan with cooking spray instead of melted butter. The cooking temperature & the cooking time in the original recipe are wrong (the top will over cook & inside will still be raw) so I cook for 40 minutes at 400 degrees F.
Sauteed Apples (4-6 servings)
Ingredients:
1/4 cup butter
4 large tart apples - peeled, cored and
sliced 1/4 inch thick
2 teaspoons cornstarch
1/2 cup cold water
3/4 cup brown sugar
1/2 teaspoon ground cinnamon
Directions:
1. In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
2. Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

Changes I make from the original recipe: For serving over pancakes, I up the water from 1/2 cup to 3/4 cup so there is extra sauce.
Putting it all together:
Serve squares of pancake on each plate & top with sauteed apples. Enjoy.
