Trust me when I say it takes less skill with woodworking and more patience than anything else.

The biggest reason most guitars are made through a gluing process like that is lumber billets large enough for 1 piece bodies/tops/etc are pricey. Way cheaper to glue two pieces than buy one big piece. In most cases, you don't lose any structural integrity doing so, either.
