Why are girls interested when I ignore them
When I ignore a girl, not completely ignore but give minimum notice to, they are persistent at getting attention from me. They act interested, being nice as if they like me.
Months go by when finally I give her the time of day, she soon becomes uninterested, then often goes after someone else.
It's not really an issue since I never cared though it has happened multiple times now.
What you guys think the reason behind this is?

Going months with paying minor attention or simply hinting at interest can only continue to be intriguing for so long.
If enough time passes and the only topics brought up are concerning trivial matters and the weather, she is going to realize that you were just being shy or didn't know what to say in comparison to some freestanding "mysterious persona".
